Recipe: Grass-Fed Burger with Blue Cheese and Caramelized Onion and Mushroom

 

Burger:

  • Season 1lb ground grass-fed beef with chili powder and salt
  • Divide beef into 3 equal parts and form into balls
  • Poke hole in each burger with thumb and put a heaping tsp on blue cheese inside (more or less based on preference). Form burger around blue cheese and flatten into patty.
  • Sear on each side for 2 minutes on high heat and finish in 425 degree oven until medium (slight bounce back when poked). About  5-8 min.
  • Sautee onions until caramelized. Sauté mushrooms until tender and browned.
  • Top burger with onions and mushrooms. Try pairing with Steve’s Paleo ketchup on side.
  • If this is a cheat day place it on a PRETZEL BUN!

Fries:

  • Cut sweet potato (skin on or off) into 1/4 inch thin sticks
  • Make sure they are really dry! If wet at all dry with towel
  • Place in plastic bag and toss with 2 tbs of tapioca four
  • Take out and shake off excess. Place in large bowl and toss with drizzle of olive oil, chili powder and salt
  • Place in SINGLE layer on 1-2 oiled or parchment lined baking sheets. Do not crowd or they will steam
  • Put in preheated 425 degree oven for 10-15 min until crispy on outside and tender on the inside

Salad:

  • Use a pre washed mixed greens salad and top with halved cherry tomatoes, cucumber, carrot, crumbled goat cheese.
  • Drizzle with balsamic vinegar and olive oil
